Key Lime Cone Cakes {RECIPE}

It's been a long week here in the Yippee household and I'm so glad it's Friday. I haven't talked about this here before but my older daughter struggles with anxiety, depression and ADHD. Life can be hard for her at times and this week was especially trying. It's difficult parenting a teen who struggles with mental health issues but not as hard as it is being a teen with mental health issues. She has a team of people in her life to help but often times she has to get through her day on her own, once class at a time. Even though it was a huge challenge, she went to school every day (sometimes she can't even do that) and she made it through the week in one piece. I'm proud of her. We're both exhausted. I have struggled at times myself with anxiety and panic attacks which allows me to be a more understanding parent, but also worries me for her because I know how awful it feels. But the good news is that summer is only a few weeks away and she always experiences improved mood and lowered symptoms during the summer. She loves to travel and we have several trips planned, including leaving on her 16th birthday for Europe. We're counting down the days.

On a more positive note, Cinco de Mayo is this weekend! Who's planning on tacos for dinner Sunday night? We are! I have the BEST taco recipe if anyone wants it, leave me a comment below and I'll share it with you! And these cone cakes will be the perfect dessert!

Do you like key lime pie? If yes, I promise you you're going to love these. I've mentioned before that I'm a vanilla, caramel, fruit dessert lover (not chocolate) so I do like key lime pie. And these are really really good. Whenever I make a new recipe, I of course need to try it. If I don't like it, I'll take one to two bites (second bite is to make sure ;). If I do like it, I'll eat the entire cone cake to get the full experience. Rarely do I eat more than one. But let me tell ya - I totally ate a second one RIGHT AWAY! You know what it is? It's the key lime pie filling that makes these AWESOME. 

In fact, if I were going to make these again, I'd punch out some cake from the middle as soon as they come out of the oven. Then fill the hole with the key lime filling so there's even more of it in the cone. Boom.

1. Place holders on light colored cookie sheet and insert cones.
2. Make cake batter. Classic White is perfect for this recipe!  Classic Yellow will work as well.
3. Fill cone about half to two-thirds full.

4. Bake at 325 degrees F for 20-25 minutes, or until a toothpick comes out clean when inserted into the cake.  Cool on a cooling rack for just a couple of minutes.

5. Poke several holes into each cone with a skewer.

6. Boil 1/2 cup water and mix in jello, stirring until dissolved. Add 1/2 cup cold water. Pour 1/2 to 1 tsp. of jello into the holes of each cone cake. Pouring in too much will make the cones soggy.

7. Refrigerate at least two hours. When ready, make key lime pie filling according to package directions (or use canned filling).

8. Top off each cone cake with key lime pie filling.

9. Dallop cool whip on top and garnish with lime slices!
