Calling all mint chocolate chip fans! This icing is going to be your new favorite! My husband has been out of the country for a while now and we're missing him like crazy. He loves mint chocolate chip ice cream, so I wanted to find a recipe that I knew he'd love. I'm not a huge fan of mint chocolate chip but guys - this is unbelievably delicious. When I tried it I was shocked at how good it is. I put about half in the freezer to use when he returns later this week, and the other half is for us to enjoy until then.
I used devil's food chocolate cake mix and brown colored cones (they are not chocolate flavored, as some have asked.) While the cone cakes were in the oven, I began mixing the icing. The recipe is here.
I want to point out one note of caution. If you put chocolate chips in the icing (the last step in the recipe) - you will not be able to pipe the icing using a piping tip. I learned the hard way (then was like, duh!) The chips clog the tip. If you plan to use a piping tip, keep the chips out of the icing and sprinkle them on top, as shown in the photos.
